Beyond marking a long-awaited homecoming for the brand, the debut represents a major corporate milestone: the grand opening of Fairmont’s 100th hotel globally.

Situated prominently in the heart of the Central Business District, the new 250-room luxury destination places guests within comfortable walking distance of the historic French Quarter while remaining adjacent to the Caesars Superdome. The property seamlessly merges the high-end hospitality standards expected of the global brand with the distinct, soulful character of New Orleans, offering destination-caliber dining in partnership with renowned celebrity chef Emeril Lagasse and The Emeril Group, alongside more than 19,000 square feet of sophisticated meeting and event space.

Developed by Kailas Companies and expertly operated by Fairmont Hotels & Resorts, the hotel occupies 17 stories of a prominent local landmark: the former Bank of New Orleans building. Originally designed by the esteemed architectural firm Skidmore, Owings & Merrill in 1970, the 31-story tower has undergone a sensitive and rigorous restoration process. Historic elements, including the building’s original sidewalks, entry canopy, ground-floor lobby floors, and structural concrete walls on the first and second levels, have been meticulously refurbished. Additionally, the second floor’s striking decorative bronze paneling and rich local cypress ceiling have been carefully restored to their original mid-century grandeur, anchoring the contemporary luxury property in architectural history.

Statements From Leadership

Reflecting on the significance of the launch, Omer Acar, CEO of Fairmont Hotels & Resorts, emphasized the alignment between the brand’s corporate milestone and the unique cultural fabric of the destination.

"Celebrating Fairmont’s landmark 100th hotel in New Orleans is a moment of perfect alignment," said Acar. "This is a city built on the very poetry of celebration, culture, and hospitality, setting the ultimate stage for such a historic milestone. After two decades away, returning to New Orleans feels like a joyful homecoming. This magnificent property is designed to be a vibrant social epicenter, a sanctuary where the city’s rich heritage meets a sophisticated, contemporary energy. Through meticulous design, spirited gastronomy, and exceptional spaces created for connection, we are not just opening a hotel; we are welcoming the soulful spirit of New Orleans back into the global Fairmont family for our next great chapter."

Eric Overstreet, general manager of the Fairmont New Orleans, echoed this enthusiasm regarding the property’s integration into the local community and the broader hospitality landscape.

"Today marks an exciting new chapter for Fairmont New Orleans and for our city," said Overstreet. "From the moment guests enter our lobby to an evening at Delmonico Steakhouse, the hotel was designed to feel distinctly of New Orleans, while offering the service and experience Fairmont is known for. We’re proud to welcome travelers and our local community into these spaces and look forward to seeing Fairmont New Orleans become part of the city’s next chapter."

Food and Beverage

Gastronomy serves as a cornerstone of the Fairmont New Orleans experience, highlighted by a high-profile culinary partnership with Chef Emeril Lagasse and The Emeril Group. This collaboration introduces fresh, distinct dining concepts to the city’s Central Business District, blending traditional hospitality with innovative epicurean execution.

At the forefront of the hotel’s culinary offerings is Delmonico Steakhouse. Marking the concept’s debut in New Orleans and its very first location outside of Las Vegas, the restaurant brings Chef Lagasse’s signature take on the classic American steakhouse to his home city. Open for dinner, the venue pairs traditional steakhouse methodologies with bold New Orleans flavors. Diners can enjoy hand-selected prime cuts sourced from Creekstone Farms that are dry-aged in-house, alongside high-grade Japanese Wagyu, premium seafood selections, and a comprehensive oyster and caviar program.

Complementing the steakhouse is The Café by Emeril, which opens daily for breakfast and lunch. Designed to deliver a vibrant brasserie-style experience, the café bridges French-inspired culinary classics with local Creole accents and distinct Southern influences. From signature chicory-laced coffee to elevated breakfast and midday favorites, the welcoming space flows seamlessly into the hotel’s main lobby.

"I’m thrilled to bring Delmonico Steakhouse to New Orleans alongside The Café by Emeril, creating two distinct dining experiences that reflect what I love about cooking and bringing people together," said Chef Lagasse. "We’re proud to be a part of Fairmont’s return to the city and look forward to welcoming both locals and visitors to experience the bold flavors, genuine hospitality, and unmistakable New Orleans spirit that defines everything we do."

Further expanding the property’s culinary and nightlife footprint, additional venues are slated to open in early December. These include the hotel’s rooftop pool environment, Bleu Perdu, and the sophisticated late-night destination, Third Measure. Perched 31 floors above the New Orleans streetscape, the rooftop environment is engineered to transition effortlessly from a sunlit daytime retreat to an energetic nighttime venue. Bleu Perdu opens directly onto the pool terrace, pairing panoramic, sweeping views of the city skyline and the Mississippi River with relaxed bistro-style dining, sun loungers, private cabanas, lush foliage, and Spanish-inspired black-and-white tile aesthetics.

In close proximity, Third Measure will debut as a late-night cocktail bar developed in close collaboration with Neal Bodenheimer, the founder of the acclaimed New Orleans cocktail institution Cure. The concept draws inspiration from the city’s lost cocktail traditions and deep musical heritage. Guests arrive via an atmospheric entrance featuring wardrobe-inspired double doors that lead into a layered, textural space. Design elements include custom fan-shaped marble mosaic flooring inspired by clouds, a gleaming white marble bar, pearlescent railings, and an immense custom Lasvit chandelier—each element paying subtle homage to the building’s 1970s architectural origins.

Wellness

To complement its culinary and lodging offerings, the property will introduce a comprehensive 10,000-square-foot spa and fitness center in early December. The wellness facility is designed to elevate the guest experience through three private treatment rooms, a dedicated couples’ suite, a dry sauna, a steam room, and peaceful relaxation lounges, including a sauna that features sweeping views of the New Orleans skyline.

Additionally, the spa includes a specialized Dressing Room designed to function as a social preparation space for bridal parties, debutantes, and other milestone celebrations. For physical conditioning, a state-of-the-art fitness studio equipped with Matrix Onyx machinery offers individualized training sessions.

The wellness ethos extends beyond the four walls of the spa through Fairmont’s new "Wellness Without Walls" initiative. This program connects guests with active, outdoor experiences throughout the local destination. Offerings include self-guided walking tours that blend local art galleries with kayaking and pedal boating excursions, as well as self-led "Run The River" fitness routes along the Mississippi River and Goldring Woldenberg Riverfront Park. Furthermore, ALL Accor members and guests can take advantage of a complimentary Nike Lending Gear service throughout the duration of their stay.

Accommodations on the upper levels include dramatic loft suites featuring double-height windows that frame views of the Caesars Superdome. These upper-tier rooms boast lofted primary bedrooms enclosed by glass railings, custom wallcoverings, and fully appointed wet bars complete with hammered brass sinks.

Meetings and Events

Designed to cater to both corporate functions and social galas, the Fairmont New Orleans opens with more than 19,000 square feet of versatile meeting and event space. The facilities are capable of accommodating gatherings of varying scales, from intimate board meetings of 10 people to grand celebrations hosting up to 500 guests.

The event infrastructure comprises nine primary venues, which include two expansive ballrooms measuring approximately 4,000 square feet each, six dedicated meeting rooms, and an executive boardroom. These function spaces are supported by three dedicated pre-function foyers.

Notably, the hotel’s second floor—originally constructed as the primary lobby for the Bank of New Orleans—has been carefully restored to honor its historical character. The level now houses two main foyers and the two primary ballrooms. Within these spaces, the building’s original local cypress wood ceilings and restored decorative bronze paneling have been preserved, providing an authentic local backdrop for contemporary events.

NEW YORK — Fairmont Hotels & Resorts has officially announced the opening of the Fairmont New Orleans, a milestone project that signifies the luxury hospitality brand’s triumphant return to the Crescent City after an absence of two decades.
