Washington, D.C.’s culinary scene has a vibrant new destination that bridges the gap between the fiery, complex traditions of northern Thailand and the bounty of the local DMV agricultural network. Alfie’s, the brainchild of chefs Justin Ahn and Alex McCoy, has officially touched down in the nation’s capital, trading its nomadic days for a permanent address tucked away in a Georgetown alleyway.

The establishment’s journey to this brick-and-mortar home has been a winding one. Alfie’s first emerged on the D.C. food scene as a popular pop-up in Petworth back in 2017. From those modest neighborhood beginnings, the concept traveled across oceans and international borders, serving eager diners through residencies in major culinary hubs like New York and London. Now, with a permanent kitchen to call its own, the team is settling into a rhythm that honors the intense heat and meticulous preparation methods of northern Thai cooking, while playfully incorporating global and local influences.

A behind-the-scenes look at the daily operations of the new kitchen reveals a rigorous prep schedule and a deep commitment to scratch-made dishes. The culinary team guides visitors through the meticulous preparation of everything from hand-cut green papaya destined for vibrant som tam salads to an ultra-exclusive Thai steak frites featuring a rich massaman curry peppercorn sauce.

In the kitchen, the precision required for the menu becomes immediately apparent as the team breaks down thick rib-eye steaks for their unique take on steak au poivre. This particular fusion dish is so labor- and ingredient-intensive that it is offered in strictly limited quantities—only five orders are made available each night. When an order comes in, the massive 26-ounce rib-eyes are carefully seared to order. The distinctive au poivre massaman curry sauce is then finished directly in the pan, drawing immense depth of flavor from the leftover beef fat. This formidable cut of meat is served alongside classic bar fries, marrying traditional Western comfort food with deeply aromatic Southeast Asian flavor profiles.

Elsewhere along the bustling kitchen line, another chef focuses on the meticulous preparation of green papayas. The fruit is carved into irregular slices before being tossed to order in a funky, spicy dressing. Described by the kitchen staff as the most labor-intensive dish on the line, each order of the som tam salad requires careful mixing with fresh tomatoes, crunchy peanuts, and a balanced dressing heavy on palm syrup and tamarind, ensuring that the bright, acidic, and fiery notes hit the palate in perfect harmony.

Nearby, a rich pork belly curry simmers steadily, filling the air with the unmistakable aromas of traditional northern Thai comfort food. The dish, known as gaeng hung lay, requires large pieces of pork belly to cook down slowly until they develop a melt-in-your-mouth fatty layer. To cut through the intense richness of the meat and the dense curry paste, the chefs incorporate pickled garlic and pineapple, alongside tamarind and fish sauce, creating a complex flavor profile that balances sweet, sour, salty, and savory elements.

As the evening service approaches, the tempo in the kitchen shifts toward final preparations. The chefs turn their attention to fresh herbs and sticky rice that has spent the night soaking. The rice is quickly steamed just before service to achieve that signature malleable, glutinous texture that is essential for scooping up rich curries and sauces.

Reflecting on the grueling hours and relentless demands of running a high-end kitchen, Chef Alex McCoy shares his perspective on the hospitality industry. He notes that being a chef is far more than a standard nine-to-five job; it is a total lifestyle commitment. However, McCoy emphasizes that the immense physical and mental effort is entirely worthwhile the moment you look out into the dining room and get to see guests genuinely enjoying the fruits of your labor every single night. Ultimately, McCoy envisions Alfie’s as an escape—a welcoming neighborhood sanctuary where patrons can simply forget about the outside world, enjoy a fantastic meal, and completely lose themselves in the sensory experience of the food and the atmosphere.
